We didn’t set out to start a chip company. We set out to stop digging through bags for the good ones.
The origin story
It started with a fight over a chip.
Shaun & Maggie, Austin. For years, our kitchen operated under one unspoken law: whoever finds a folded chip has to show the other person before eating it. It was a ceremony. It was also, occasionally, a hostage negotiation.
One night, three folded chips deep into an otherwise disappointing bag, Shaun said the thing out loud: “Why won’t anyone just sell us a bag of these?” We waited for someone to do it. Nobody did. So we bought a kettle, ruined several batches, learned to fold hot potato slices with our actual hands, and started weighing our weekends in chips.
Now every bag we make is the bag we were always digging for — the folded ones, all of them, every time. The fight over the last good chip is over. Mostly.
The engineering obsession
Why folding?
A folded chip is a double-layer chip. Two walls of kettle-cooked potato, one seam, twice the resistance — which your ears register as a deeper, louder, longer crunch. It can’t be faked by cutting thicker, and no machine folds a chip on purpose. So we do.
Slice just right
Every slice is cut to the exact thickness for the optimal crunch once it’s folded — enough body to hold the fold, thin enough to shatter clean.
Kettle cook
Small batches, low and slow in avocado oil, constant motion. This is where the blisters and the bronze happen.
Fold & inspect by hand
While the chip is still warm and willing, it gets folded. Every bag gets human eyes before it gets a seal.
The contract, restated
- Every chip folded by hand.
- Every bag inspected by hand.
- Flats never make it in — they’re donated, because flats deserve a home too. Just not yours.
The flats program is real: every un-foldable chip goes to local food-rescue partners in Austin. Nothing we cook gets wasted — some of it just doesn’t get to wear the logo.
